Easy Sugar Cookies


* 2 3/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1 cup butter, softened
* 1 1/2 cups white sugar
* 1 egg
* 1 teaspoon vanilla extract


DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

OATMEAL PEANUT BUTTER CHIP COOKIES


3/4 c. shortening
1 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1/4 c. water
1 tsp. vanilla
1 tsp. salt
1 c. flour
1/2 tsp. baking soda
3 c. quick oatmeal
1 (12 oz.) pkg. peanut butter chips

Preheat oven to 350 degrees. Beat together shortening, sugars, eggs, water and vanilla until creamy. Combine remaining dry ingredients and add to mixture; mix well. Drop rounded teaspoonsful onto greased cookie sheet. Bake for 12-15 minutes.

Funfetti Cupcakes I made June 14


Funfetti Cupcakes
1/2 cup milk
3 large egg whites
1 tsp vanilla extract
1/4 tsp almond extract
1 1/4 cups all purpose flour
1 cup sugar
1/2 tsp salt
2 tsp baking powder
6 tbsp butter, soft
2 tbsp rainbow sprinkles

Preheat oven to 350F.
Line a 12-cup muffin tin with paper liners.
In a measuring cup, whisk together milk, egg whites and extracts. Set aside
In the bowl of an electric mixer (or a large bowl if you prefer to work by hand), combine flour, sugar, salt and baking powder. Stir to combine. Cut in butter with the paddle attachment at low speed (or cut in by hand), until mixture is coarse and sandy. Add milk mixture and beat at medium speed for 1 1/2 minutes. Scrape sides of bowl and continue beating for 20-30 seconds. Stir in sprinkles.
Divide batter evenly into prepared tin. Bake for for 15 minutes, or until a tester comes out clean.
Remove from pan and cool completely on a wire cooling rack before frosting.
Makes 12.

Chocolate Chip Cookie I made for the first time



Chocolate Chip Cookie Ingredients

• 3/4 cup sugar
• 3/4 cup packed brown sugar
• 1 cup butter, softened
• 2 large eggs,beaten
• 1 teaspoon vanilla extract
• 2 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 3/4 teaspoon salt
• 2 cups semisweet chocolate chips

Directions:
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.

SLICE AND BAKE COOKIE VARIATION:
PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in wax paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies.

* May be stored in refrigerator for up to 1 week or in freezer for up to 8 weeks.

FOR HIGH ALTITUDE BAKING (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes.

Power walk

This morning I woke up and was in the mood for a power walk. So I feed Amo and then my hubby woke up and asked me where was I going and I replied, I'm going to go for a power walk I need to start walking I had a baby 3 months ago and Its time to get back in shape. I can't fit in any of my old jeans. Its time to get this back on track. So i got lil Amo ready and myself. My hubby got ready as well. So we walked for maybe 45 mins and it felt great seeing the sun raise in the morning and that was awesome. I think I'm going to do this everyday I need my will power back.

First Time Amo Giggle

I was getting him ready to go out to check out this school so I could get my Massage business up here now that i live in fl. So I was putting him some sunblock and all of sudden he started laughing so hard and he is 2 months and 3 weeks and it was the cutest moment and I was so happy I saw it first. I called his dad to let him know Amo just laugh so hard and he said that was cool. Then i called my mother to let her know as well. I was trying to get it on camera and he didn't want to do it anymore. I guess that's how baby's do it you have to be there at the spare of the moment.. Love you papi 6-12-09
